Serve with mini pitas or tortilla chips.
1. In saucepan, melt butter over medium heat and cook onion until softened but not browned.
2. Add banana and cook one minute.
3. Add curry powder and cook one minute.
4. Add water and bring to a boil; reduce heat and simmer 10 minutes or until liquid is reduced by half.
5. Remove from heat and stir in jam.
6. Transfer to food processor or use a hand blender and process until smooth.
7. Add sour cream, mayonnaise, salt and pepper. Mix well.
